I use a mixture of cinnamon, vanilla, and nutmeg (the flavours are mostly the same to me, but they taste good).

Start with the crepe batter. In a large bowl, combine 3/4 cup whole milk, 3/4 cup heavy cream, and 3/4 cup flour, salt, and vanilla. Mix well and allow to chill for 30 minutes. The mixture needs to be thin and warm but not hot. The Dough Make the crepe dough by combining one cup flour and 1 1/2 tsp salt in a large bowl. Knead with your hands to combine. Cover with plastic wrap and allow to rest for 30 minutes. Prep The Crepes Heat a nonstick pan over medium-low heat and spray it with a little cooking spray. (See step 1 above for where you can buy crepe paper). Place a 1/3 cup of butter in the pan. Add 2 large eggs and a 1/2 teaspoon of salt, whisking constantly until the mixture is light and creamy.

First off, start with quality ingredients. High quality ingredients will make your crepes much better. It’s okay to use store-bought crepe batter, but if you do choose to make them at home, there are some steps to follow that will make them both taste and fluffier. A Word About Storing Place your crepe batter in the refrigerator or freezer between each use to prevent it from going flat, but never put in the freezer for extended periods of time (over -8 degrees F) as this will cause the batter to harden. And To Make Crepes, In a large, non-stick saute pan or skillet, add enough vegetable oil to come half way up the sides of your pan. Heat over high heat, turning only once to ensure everything gets good and heated.
